- 1 cup fresh or frozen cranberries (thawed if frozen)
- 1/2 cup white chocolate chips or chunks
- 8 oz cream cheese, softened

- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons heavy cream or milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Using a mixer, beat the softened butter with sugar until fluffy and pale, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
- Gradually combine the dry ingredients with the butter mixture, alternating with the sour cream or Greek yogurt until just combined.
- Gently fold in the cranberries and white chocolate chips.
- Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting.
- To make the frosting, beat the cream cheese and softened butter until smooth, then gradually mix in the powdered sugar and vanilla extract, adding heavy cream or milk to reach a spreadable consistency.
- Spread the frosting over the cooled cake and garnish as desired.
Notes
Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week. It can be frozen for up to three months.
