Description

A delightful coffee cake combining tart cranberries with rich white chocolate, perfect for breakfast, brunch, or dessert.


Ingredients

  • 1/2 cup sour cream or Greek yogurt
  • 1 cup fresh or frozen cranberries (thawed if frozen)
  • 1/2 cup white chocolate chips or chunks
  • 8 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. Using a mixer, beat the softened butter with sugar until fluffy and pale, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  5. Gradually combine the dry ingredients with the butter mixture, alternating with the sour cream or Greek yogurt until just combined.
  6. Gently fold in the cranberries and white chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely before frosting.
  9. To make the frosting, beat the cream cheese and softened butter until smooth, then gradually mix in the powdered sugar and vanilla extract, adding heavy cream or milk to reach a spreadable consistency.
  10. Spread the frosting over the cooled cake and garnish as desired.

Notes

Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week. It can be frozen for up to three months.
