- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 1 apple, diced
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/4 cup chopped pecans (optional)
- Butter or olive oil for greasing
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Bake for 45-60 minutes until tender.
- In a saucepan, cook cranberries with maple syrup over medium heat until they pop.
- Add diced apple, cinnamon, nutmeg, salt, and pepper to the saucepan and cook for another 5 minutes.
- Once the sweet potatoes are cooked, remove them from the oven and cut them in half. Scoop out the flesh into a bowl, leaving a little around the edges.
- Mash the sweet potato flesh with the cranberry-apple mixture until well combined.
- Refill the sweet potato skins with the mixture. If using, sprinkle with chopped pecans on top.
- Return the filled sweet potatoes to the oven and bake for an additional 15-20 minutes until heated through.
- Serve warm and enjoy!
