This Cracker Barrel campfire chicken recipe features juicy chicken breasts, tender vegetables, and garlic herb butter—all cooked in foil for a rustic, one-pan dinner.
Ingredients
2 boneless, skinless chicken breasts
1 cup baby carrots
1 cup red potatoes, quartered
1 small red onion, sliced
2 tbsp olive oil
2 tbsp unsalted butter, melted
1 tsp garlic powder
1 tsp smoked paprika
½ tsp thyme
½ tsp salt
¼ tsp black pepper
Fresh parsley for garnish
Foil for wrapping
Instructions
1. Preheat oven to 400°F or prepare a grill to medium-high heat.
2. Toss carrots, potatoes, and onion with 1 tbsp olive oil, salt, and paprika.
3. Rub chicken with garlic powder, thyme, pepper, and remaining olive oil.
4. Place half of the veggies in each foil sheet, top with a chicken breast, and drizzle with melted butter.
5. Seal foil packets tightly and place on baking sheet or grill.
6. Cook for 35–40 minutes until chicken reaches 165°F and veggies are tender.
7. Carefully open foil, garnish with parsley, and serve hot.
Notes
Add Cajun or chili seasoning for extra kick.
Use sweet potatoes or zucchini for a twist.
Refrigerate leftovers up to 4 days or freeze for 2 months.
