Description

A savory twist on classic crème brûlée creamy custard infused with crab and topped with a golden caramelized crust.


Ingredients

Scale

1 cup crab meat

6 egg yolks

1 1/2 cups heavy cream

1/4 tsp salt

1/4 tsp white pepper

Pinch nutmeg

1 tsp Dijon mustard (optional)

2 tbsp Parmesan cheese

3 tbsp brown sugar

1 tbsp chives


Instructions

1. Preheat oven to 320°F.

2. Whisk yolks, seasoning, and cream until smooth.

3. Add Dijon and cheese.

4. Divide crab into 4 ramekins and pour custard on top.

5. Bake in water bath 35–40 min.

6. Cool, chill, then top with sugar.

7. Caramelize with torch and serve.

Notes

Make ahead and brulee before serving.

Use high-quality crab for best flavor.

Store without topping up to 2 days.
