A warm and comforting soup made with Italian sausage, potatoes, and greens in a rich broth. Perfect for chilly days!
Ingredients

- 1 pound Italian sausage (mild or spicy)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced (about 4 cups)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale or spinach, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese for serving (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large pot over medium heat, add the olive oil and let it warm for a minute.
- Add the Italian sausage to the pot. Break it apart with a spoon and cook until browned and fully cooked, about 6-8 minutes. Drain any excess grease if necessary.
- Add the diced onion to the pot and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the diced potatoes, chicken broth, thyme, oregano, salt, and pepper. Bring to a boil.
- Once it reaches a boil, reduce heat to low, cover, and let it simmer for about 15-20 minutes or until the potatoes are tender.
- Stir in the heavy cream and chopped kale or spinach. Let it simmer for another 5 minutes.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
