Description

A warm and comforting soup made with Italian sausage, potatoes, and greens in a rich broth. Perfect for chilly days!


Ingredients

Scale
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, peeled and diced (about 4 cups)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale or spinach, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Grated Parmesan cheese for serving (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot over medium heat, add the olive oil and let it warm for a minute.
  2. Add the Italian sausage to the pot. Break it apart with a spoon and cook until browned and fully cooked, about 6-8 minutes. Drain any excess grease if necessary.
  3. Add the diced onion to the pot and sauté for 3-4 minutes until translucent.
  4. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  5. Add the diced potatoes, chicken broth, thyme, oregano, salt, and pepper. Bring to a boil.
  6. Once it reaches a boil, reduce heat to low, cover, and let it simmer for about 15-20 minutes or until the potatoes are tender.
  7. Stir in the heavy cream and chopped kale or spinach. Let it simmer for another 5 minutes.
  8. Taste and adjust seasoning with more salt and pepper if needed.
  9. Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
