Description

A warm and hearty chowder featuring tender salmon, creamy broth, and fresh vegetables, perfect for a cozy meal.

Ingredients

Scale
  • 2 cups diced potatoes
  • 1 cup sweet corn (fresh or frozen)
  • 1 lb salmon fillet, skin removed and cut into chunks
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the aromatics in a large pot with olive oil over medium heat until the onion is soft and translucent, about 3-4 minutes.
  2. Add the diced potatoes and sweet corn to the pot, stirring to mix.
  3. Heat the chicken or vegetable broth, bringing to a boil. Reduce heat to low and simmer until potatoes are tender, about 15 minutes.
  4. Add the salmon chunks, cooking until flaky, about 5 minutes.
  5. Incorporate the heavy cream and season with salt and pepper. Heat through until warm.
  6. Serve in bowls, garnished with fresh parsley if desired.

Notes

For best results, use fresh ingredients and avoid overcooking the salmon.
