Ingredients

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced (Yukon Gold or Russet)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups kale or spinach, chopped
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tbsp olive oil (if needed, for sautéing)
  • ½ cup grated Parmesan cheese (for garnish)

Instructions

  1. In a large pot over medium heat, brown the Italian sausage for 5-7 minutes until cooked through. If in casings, remove and break into smaller pieces.
  2. Add diced onion and cook for 2-3 minutes until soft. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add diced potatoes, chicken broth, salt, black pepper, and crushed red pepper flakes. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until potatoes are tender.
  4. Stir in heavy cream and chopped kale or spinach. Simmer for an additional 5 minutes until greens are tender. Adjust seasoning if necessary.
  5. Serve the soup warm, garnished with grated Parmesan cheese.
