- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 cups kale or spinach, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- 1 tbsp olive oil (if needed, for sautéing)
- ½ cup grated Parmesan cheese (for garnish)
Instructions
- In a large pot over medium heat, brown the Italian sausage for 5-7 minutes until cooked through. If in casings, remove and break into smaller pieces.
- Add diced onion and cook for 2-3 minutes until soft. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add diced potatoes, chicken broth, salt, black pepper, and crushed red pepper flakes. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until potatoes are tender.
- Stir in heavy cream and chopped kale or spinach. Simmer for an additional 5 minutes until greens are tender. Adjust seasoning if necessary.
- Serve the soup warm, garnished with grated Parmesan cheese.
