Ingredients

  • 2 cups kale or spinach, chopped
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

  1. Heat a large pot over medium heat. If using lean sausage, add olive oil. Brown the Italian sausage, breaking it up into chunks for 5-7 minutes.
  2. Add the diced onion and minced garlic; cook until onions are translucent, about 3-4 minutes.
  3. Add the diced potatoes and chicken broth, bringing it to a boil. Lower the heat and simmer for 15-20 minutes until potatoes are tender.
