- 2 cups kale or spinach, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)

Instructions
- Heat a large pot over medium heat. If using lean sausage, add olive oil. Brown the Italian sausage, breaking it up into chunks for 5-7 minutes.
- Add the diced onion and minced garlic; cook until onions are translucent, about 3-4 minutes.
- Add the diced potatoes and chicken broth, bringing it to a boil. Lower the heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in heavy cream and chopped kale or spinach. Cook for an additional 5-7 minutes until greens are wilted. Season with salt, black pepper, and crushed red pepper flakes.
- Serve hot, garnished with grated Parmesan cheese, and enjoy with crusty bread.
