- 4 sweet potatoes
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Garlic powder to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Bake in the preheated oven for about 45-60 minutes or until tender.
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until they become soft.
- Add the fresh spinach to the mushrooms and cook until wilted.
- Combine the sautéed mixture with cream cheese, Parmesan cheese, salt, pepper, and garlic powder in a bowl. Mix well.
- Remove sweet potatoes from the oven, let them cool slightly, then cut in half lengthwise and scoop out some flesh.
- Fill each sweet potato half with the mushroom and spinach mixture.
- Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes.
- Serve warm and enjoy!

For extra crunch, top with additional cheese or breadcrumbs before returning to the oven.
