Ingredients

  • 34 Granny Smith Apples (Peeled and sliced)
  • 1 cup Old Fashioned Rolled Oats
  • 1/3 cup Sugar
  • 1 cup All-Purpose Flour
  • 1/2 cup Unsalted Butter (Cold, cut into pieces)
  • 4 Egg Yolks
  • 1/2 cup Sugar
  • 2 cups Whole Milk
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, followed by the whole milk.
  4. Combine the rolled oats, sugar, and flour in another bowl. Cut in the cold butter until crumbly.
  5. Whisk together the flour, baking powder, cinnamon, and salt in the wet mixture.
  6. Fold in the sliced Granny Smith apples.
  7. Pour the batter into the prepared pan and sprinkle with the streusel topping.
  8. Bake for 45-50 minutes or until a toothpick comes out clean and cool for 10 minutes.
  9. Whisk together the egg yolks, sugar, and milk in a saucepan and cook until thickened. Stir in the vanilla extract.
  10. Serve the cake warm with custard or allow it to cool completely.
