Ingredients

- 1 pound ground beef
- 1 medium onion (diced)
- 1/2 cup red bell pepper (diced)
- 1/2 cup green bell pepper (diced)
- 1 cup peeled and diced potatoes
- 1 (15 ounce) can diced tomatoes with juice
- 1 (15 ounce) can sweet corn (drained)
- 1 (15 ounce) can pinto beans (drained)
- 1 (8 ounce) can tomato sauce
- 3 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon garlic salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon cumin
- Chopped parsley or cilantro (for garnish)
Instructions
- In a large pot, heat a little oil over medium heat. Add the ground beef and cook until it is browned. Make sure to break it up with a spoon as it cooks.
- Once the beef is browned, add the diced onion and bell peppers. Cook for about 5 minutes until the vegetables start to soften.
- Add the diced potatoes and stir well.
- Pour in the diced tomatoes with juice, sweet corn, pinto beans, tomato sauce, and beef broth. Mix to combine.
- Sprinkle in the chili powder, garlic salt, smoked paprika, Cajun seasoning, and cumin. Stir everything together.
- Bring the pot to a boil, then reduce the heat and let it simmer for about 30 minutes. Stir occasionally to prevent sticking.
- Taste the soup and adjust seasoning if needed.
- Once done, serve the soup hot, garnished with chopped parsley or cilantro.
Notes
Cowboy Soup can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
