Description

A hearty and comforting Cowboy Soup that’s packed with flavors and perfect for family dinners or chilly evenings.


Ingredients

  • 1 pound ground beef
  • 1 medium onion (diced)
  • 1/2 cup red bell pepper (diced)
  • 1/2 cup green bell pepper (diced)
  • 1 cup peeled and diced potatoes
  • 1 (15 ounce) can diced tomatoes with juice
  • 1 (15 ounce) can sweet corn (drained)
  • 1 (15 ounce) can pinto beans (drained)
  • 1 (8 ounce) can tomato sauce
  • 3 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon garlic salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon cumin
  • Chopped parsley or cilantro (for garnish)

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the ground beef and cook until it is browned. Make sure to break it up with a spoon as it cooks.
  2. Once the beef is browned, add the diced onion and bell peppers. Cook for about 5 minutes until the vegetables start to soften.
  3. Add the diced potatoes and stir well.
  4. Pour in the diced tomatoes with juice, sweet corn, pinto beans, tomato sauce, and beef broth. Mix to combine.
  5. Sprinkle in the chili powder, garlic salt, smoked paprika, Cajun seasoning, and cumin. Stir everything together.
  6. Bring the pot to a boil, then reduce the heat and let it simmer for about 30 minutes. Stir occasionally to prevent sticking.
  7. Taste the soup and adjust seasoning if needed.
  8. Once done, serve the soup hot, garnished with chopped parsley or cilantro.

Cowboy Soup can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
