- 1 cup cottage cheese
- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup cooked bacon, chopped (optional)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- Combine cottage cheese, eggs, spinach, bell peppers, bacon (if using), salt, and pepper in a blender. Blend until smooth.
- Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until the bites are set and lightly golden.
- Let them cool slightly before removing from the tin.
- Store in the refrigerator and reheat in the microwave for 45 seconds when ready to eat.
