Description

A nutritious breakfast or snack packed with protein, customizable with your favorite vegetables or meats.


Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup cooked bacon, chopped (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Combine cottage cheese, eggs, spinach, bell peppers, bacon (if using), salt, and pepper in a blender. Blend until smooth.
  3. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake in the preheated oven for 20-25 minutes or until the bites are set and lightly golden.
  5. Let them cool slightly before removing from the tin.
  6. Store in the refrigerator and reheat in the microwave for 45 seconds when ready to eat.
