Ingredients

  • 1 cup Cottage Cheese (Can substitute with ricotta cheese)
  • 1/4 teaspoon Cream of Tartar (Stabilizes whipped egg whites)
  • 1 teaspoon Baking Powder (Enhances lightness)
  • 1/4 teaspoon Salt (Balances flavors)
  • Parchment Paper (Prevents sticking)
  • Non-Stick Cooking Spray (Alternative to parchment paper)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper or spray it with non-stick cooking spray.
  2. Separate the eggs, placing the whites in one bowl and the yolks in another.
  3. Beat the egg whites on high speed, adding the cream of tartar after a minute, and whip until stiff peaks form (about 3-5 minutes).
  4. In another bowl, combine the egg yolks, cottage cheese, baking powder, and salt until smooth.
  5. Gently fold the whipped egg whites into the cottage cheese mixture.
  6. Scoop the mixture onto the prepared baking sheet in desired sizes.
  7. Bake for 25-30 minutes or until golden brown on top.
  8. Cool on a wire rack before serving.
