Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the cottage cheese, egg, and maple syrup; blend until combined for a smooth batter.
- Add the almond flour and baking powder; stir until well mixed.
- Fold in the chocolate chips and vanilla extract if desired.
- Scoop the dough onto a baking sheet lined with parchment paper, leaving space between scoops.
- Bake for 10-12 minutes, or until the edges are golden.
