- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 box cornbread mix
- 1 egg
- 1 cup milk
- Sour cream for serving (optional)
- Green onions for serving (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, brown the ground meat and drain any excess fat.
- Stir in taco seasoning, black beans, and corn.
- In a separate bowl, prepare the cornbread mix according to package instructions, adding the egg and milk.
- In a greased baking dish, layer the meat mixture, then half of the cheese.
- Pour the cornbread batter over the top, and then sprinkle the remaining cheese.
- Bake for 25-30 minutes or until the cornbread is golden and cooked through.
- Let it cool for a few minutes, serve hot with sour cream and green onions if desired.
