Ingredients

  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 box cornbread mix
  • 1 egg
  • 1 cup milk
  • Sour cream for serving (optional)
  • Green onions for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground meat and drain any excess fat.
  3. Stir in taco seasoning, black beans, and corn.
  4. In a separate bowl, prepare the cornbread mix according to package instructions, adding the egg and milk.
  5. In a greased baking dish, layer the meat mixture, then half of the cheese.
  6. Pour the cornbread batter over the top, and then sprinkle the remaining cheese.
  7. Bake for 25-30 minutes or until the cornbread is golden and cooked through.
  8. Let it cool for a few minutes, serve hot with sour cream and green onions if desired.
