Description

A delicious twist on classic deviled eggs featuring corn and chipotle mayo for added flavor.


Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle sauce
  • 1/4 cup corn (cooked and cooled)
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon lime juice
  • Salt to taste
  • Pepper to taste
  • Paprika for garnish

Instructions

  1. Hard boil the eggs: Place the eggs in a pot and cover them with water. Bring to a boil, cover, and remove from heat. Let sit for 12 minutes. Cool in ice water.
  2. Peel the eggs and slice in half lengthwise. Remove yolks into a mixing bowl.
  3. Mash yolks and mix in mayonnaise, chipotle sauce, corn, cilantro, lime juice, salt, and pepper until smooth.
  4. Spoon the mixture back into the egg whites or use a piping bag for a nicer presentation.
  5. Garnish with paprika.
  6. Chill in the refrigerator for about 30 minutes before serving.

Notes

If desired, adjust spice levels by starting with less chipotle sauce.
