A delicious twist on classic deviled eggs featuring corn and chipotle mayo for added flavor.
Ingredients

- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon chipotle sauce
- 1/4 cup corn (cooked and cooled)
- 1 tablespoon cilantro (chopped)
- 1 tablespoon lime juice
- Salt to taste
- Pepper to taste
- Paprika for garnish
Instructions
- Hard boil the eggs: Place the eggs in a pot and cover them with water. Bring to a boil, cover, and remove from heat. Let sit for 12 minutes. Cool in ice water.
- Peel the eggs and slice in half lengthwise. Remove yolks into a mixing bowl.
- Mash yolks and mix in mayonnaise, chipotle sauce, corn, cilantro, lime juice, salt, and pepper until smooth.
- Spoon the mixture back into the egg whites or use a piping bag for a nicer presentation.
- Garnish with paprika.
- Chill in the refrigerator for about 30 minutes before serving.
Notes
If desired, adjust spice levels by starting with less chipotle sauce.
