A creamy, cheesy corn casserole that’s a hit at potlucks and gatherings.
Ingredients

- 1 can of corn, drained
- 1 can of cream-style corn
- 1 cup of sour cream
- 1 package of cornbread mix
- 1 cup of shredded cheese (cheddar or your choice)
- 1/2 cup of melted butter
- 1/2 cup of diced onions (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the drained corn, cream-style corn, sour cream, cornbread mix, melted butter, and shredded cheese in a large mixing bowl. Add diced onions if using.
- Mix everything together until well combined. Season with salt and pepper to taste.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick comes out clean.
Notes
Mix gently to avoid a dense casserole. Check for doneness at the 45-minute mark.
