Description

A simple yet delicious corn casserole that serves well at potlucks and holiday gatherings.


Ingredients

  • 2 cups of corn kernels (fresh, canned, or frozen)
  • 1 cup of sour cream
  • 1 cup of cornmeal
  • 1 cup of shredded cheese (cheddar)
  • 1/2 cup of milk
  • 1/2 cup of melted butter
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • Optional: 1/2 cup of diced jalapeños

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your casserole dish.
  2. Mix the corn kernels, sour cream, cornmeal, shredded cheese, milk, melted butter, baking powder, salt, and pepper in a large bowl.
  3. Stir everything together until fully mixed.
  4. Pour the mixture into the prepared casserole dish, spreading it evenly.
  5. Bake for about 45 to 50 minutes, until the top is golden brown and the sides are bubbling.
  6. Serve warm as a delectable side dish.

Notes

If using jalapeños, add them while mixing the other ingredients. Let it cool before serving.
