Ingredients

- 2 cups of corn kernels (fresh, canned, or frozen)
- 1 cup of sour cream
- 1 cup of cornmeal
- 1 cup of shredded cheese (cheddar)
- 1/2 cup of milk
- 1/2 cup of melted butter
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- Optional: 1/2 cup of diced jalapeños
Instructions
- Preheat your oven to 350°F (175°C) and grease your casserole dish.
- Mix the corn kernels, sour cream, cornmeal, shredded cheese, milk, melted butter, baking powder, salt, and pepper in a large bowl.
- Stir everything together until fully mixed.
- Pour the mixture into the prepared casserole dish, spreading it evenly.
- Bake for about 45 to 50 minutes, until the top is golden brown and the sides are bubbling.
- Serve warm as a delectable side dish.
Notes
If using jalapeños, add them while mixing the other ingredients. Let it cool before serving.
