A delightful dessert that combines sweet pineapple with creamy Cool Whip for a light and refreshing treat.

- 1 (20-oz) can crushed pineapple, very well drained
- 1 (8-oz) tub Cool Whip, thawed
- 1 (3.4-oz) packet instant vanilla pudding mix
- 1 cup mini marshmallows
- ½ cup shredded sweetened coconut (optional)
- ½ cup chopped pecans or walnuts (optional)
- 1 cup cottage cheese, blended smooth or 8 oz cream cheese, softened
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Drain the crushed pineapple using a fine mesh strainer, reserving 2 tablespoons of the juice.
- In a large mixing bowl, beat the softened cream cheese or blended cottage cheese until smooth.
- Add the instant pudding mix and the reserved pineapple juice to the bowl; beat until thick and smooth.
- Gently fold in the drained pineapple using a spatula.
- Slowly fold in the Cool Whip until well combined.
- If desired, mix in the mini marshmallows, shredded coconut, and nuts.
- Transfer to a serving bowl, cover, and refrigerate for at least 2 hours.
- Before serving, gently stir to restore light texture and garnish as desired.
Notes
To keep the fluff fresh, store it in an airtight container in the refrigerator. It will stay good for about 3 to 5 days.
