Description

A light, sweet, and creamy salad-style dessert featuring pineapple, cream cheese or cottage cheese, and Cool Whip, perfect for potlucks and picnics.


Ingredients

  • 1 (20-oz) can crushed pineapple, very well drained
  • 1 (8-oz) tub Cool Whip, thawed
  • 1 (3.4-oz) packet instant vanilla pudding mix
  • 1 cup mini marshmallows
  • ½ cup shredded sweetened coconut (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • 1 cup cottage cheese, blended smooth or 8 oz cream cheese, softened
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Drain the crushed pineapple in a fine mesh strainer and reserve 2 tablespoons of juice.
  2. In a large mixing bowl, beat the softened cream cheese or blended cottage cheese until completely smooth.
  3. Add the instant pudding mix and the reserved pineapple juice. Beat until thick and smooth.
  4. Gently fold the drained pineapple into the mixture using a spatula.
  5. Slowly fold in the Cool Whip until well combined.
  6. If desired, gently mix in mini marshmallows, coconut, and nuts.
  7. Transfer to a serving bowl, cover, and refrigerate for at least 2 hours.
  8. Before serving, gently stir the fluff and garnish as desired.

Notes

Be sure to drain the pineapple well. You can use either cream cheese for a rich taste or blended cottage cheese for a lower-fat option.
