Description
A light, sweet, and creamy salad-style dessert featuring pineapple, cream cheese or cottage cheese, and Cool Whip, perfect for potlucks and picnics.

- 1 (20-oz) can crushed pineapple, very well drained
- 1 (8-oz) tub Cool Whip, thawed
- 1 (3.4-oz) packet instant vanilla pudding mix
- 1 cup mini marshmallows
- ½ cup shredded sweetened coconut (optional)
- ½ cup chopped pecans or walnuts (optional)
- 1 cup cottage cheese, blended smooth or 8 oz cream cheese, softened
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Drain the crushed pineapple in a fine mesh strainer and reserve 2 tablespoons of juice.
- In a large mixing bowl, beat the softened cream cheese or blended cottage cheese until completely smooth.
- Add the instant pudding mix and the reserved pineapple juice. Beat until thick and smooth.
- Gently fold the drained pineapple into the mixture using a spatula.
- Slowly fold in the Cool Whip until well combined.
- If desired, gently mix in mini marshmallows, coconut, and nuts.
- Transfer to a serving bowl, cover, and refrigerate for at least 2 hours.
- Before serving, gently stir the fluff and garnish as desired.
Notes
Be sure to drain the pineapple well. You can use either cream cheese for a rich taste or blended cottage cheese for a lower-fat option.
