- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 1/4 cups all-purpose flour

- 1 tablespoon instant coffee granules
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare two baking sheets with parchment paper.
- Mix the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add vanilla extract and eggs, mixing well after each addition.
- Combine the flour, baking soda, salt, and instant coffee granules in a separate bowl.
- Blend the dry mixture into the wet mixture, stirring until just combined.
- Fold in the chocolate chips until evenly distributed.
- Scoop rounded balls of dough onto the prepared baking sheets, leaving space between them.
- Bake for 10-12 minutes until the edges are golden brown.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
For chewier cookies, consider adding an extra egg yolk or reducing the baking time slightly.
