Description

Deliciously soft and fluffy cinnamon rolls with a fun cookie monster twist, perfect for brunch or special occasions.


Ingredients

  • 1/4 cup Granulated sugar

  • 1 large Egg yolk

  • 4 cups All-purpose flour (for gluten-free, use a 1:1 mix with xanthan gum)
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • a few drops Blue gel food coloring (or alternatives like butterfly pea powder)
  • 1/4 cup Unsalted butter (softened)
  • 1/2 cup Brown sugar
  • 2 tablespoons Ground cinnamon
  • 1 cup Crushed chocolate sandwich cookies (like Oreos)
  • 1/2 cup Mini chocolate chips
  • 4 ounces Cream cheese (softened)
  • 1/4 cup Unsalted butter
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Crushed chocolate cookies
  • to taste Extra mini chocolate chips (optional)

Instructions

  1. Prepare the Dough: In a small bowl, combine warm milk and active dry yeast. Let it rest for about 5-10 minutes until foamy. In a large mixing bowl, whisk together granulated sugar, egg, egg yolk, melted butter, salt, and vanilla extract. Add the yeast mixture and mix well.
  2. Add Flour: Gradually add the all-purpose flour, 1 cup at a time, until the dough starts to form. Knead the dough on a floured surface for about 5 to 8 minutes until smooth and elastic. Place it in a greased bowl and cover with a clean towel. Let it rise in a warm place for 1 hour or until doubled in size.
  3. Make the Filling: In a separate bowl, beat together softened butter, brown sugar, ground cinnamon, crushed chocolate sandwich cookies, and mini chocolate chips. Set aside.
  4. Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about ¼ inch thick.
  5. Add the Filling: Spread the filling evenly over the dough. Roll the dough tightly from one end to the other to form a log. Cut into slices about 1½ inches wide.
  6. Prepare the Baking Dish: Grease a baking dish and place the rolls inside, leaving space between them. Cover the dish and let the rolls rise for another 30 minutes.
  7. Bake: Preheat your oven to 350°F (175°C). Bake the cinnamon rolls for 20 to 25 minutes, or until golden brown.
  8. Make the Frosting: In a medium bowl, beat together softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth.
  9. Color the Frosting: Add blue gel food coloring to the frosting to create that cookie monster look.
  10. Frost and Serve: Once the rolls have cooled slightly, spread the blue frosting over them. Sprinkle with extra crushed cookies and mini chocolate chips if desired.

Notes

These rolls can be made gluten-free by using a 1:1 gluten-free flour blend. You can also make them dairy-free by substituting with plant-based milk and butter.
