Scale
- 1 cup Warm milk (can substitute with plant-based milk for vegan)
- 2 teaspoons Active dry yeast
- 1/4 cup Granulated sugar
- 1 large Egg (for vegan, use flax egg)
- 1 large Egg yolk
- 1/4 cup Unsalted butter (melted, can be replaced with a dairy-free alternative)
- 4 cups All-purpose flour (for gluten-free, use a 1:1 mix with xanthan gum)
- 1 teaspoon Salt
- 1 teaspoon Vanilla extract
- a few drops Blue gel food coloring (or alternatives like butterfly pea powder)
- 1/4 cup Unsalted butter (softened)
- 1/2 cup Brown sugar
- 2 tablespoons Ground cinnamon
- 1 cup Crushed chocolate sandwich cookies (like Oreos)
- 1/2 cup Mini chocolate chips
- 4 ounces Cream cheese (softened)
- 1/4 cup Unsalted butter
- 2 cups Powdered sugar
- 1 teaspoon Vanilla extract
- 1 cup Crushed chocolate cookies
- to taste Extra mini chocolate chips (optional)
Instructions
- Prepare the Dough: In a small bowl, combine warm milk and active dry yeast. Let it rest for about 5-10 minutes until foamy. In a large mixing bowl, whisk together granulated sugar, egg, egg yolk, melted butter, salt, and vanilla extract. Add the yeast mixture and mix well.
- Add Flour: Gradually add the all-purpose flour, 1 cup at a time, until the dough starts to form. Knead the dough on a floured surface for about 5 to 8 minutes until smooth and elastic. Place it in a greased bowl and cover with a clean towel. Let it rise in a warm place for 1 hour or until doubled in size.
- Make the Filling: In a separate bowl, beat together softened butter, brown sugar, ground cinnamon, crushed chocolate sandwich cookies, and mini chocolate chips. Set aside.
- Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about ¼ inch thick.
- Add the Filling: Spread the filling evenly over the dough. Roll the dough tightly from one end to the other to form a log. Cut into slices about 1½ inches wide.
- Prepare the Baking Dish: Grease a baking dish and place the rolls inside, leaving space between them. Cover the dish and let the rolls rise for another 30 minutes.
- Bake: Preheat your oven to 350°F (175°C). Bake the cinnamon rolls for 20 to 25 minutes, or until golden brown.
- Make the Frosting: In a medium bowl, beat together softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth.
- Color the Frosting: Add blue gel food coloring to the frosting to create that cookie monster look.
- Frost and Serve: Once the rolls have cooled slightly, spread the blue frosting over them. Sprinkle with extra crushed cookies and mini chocolate chips if desired.
