Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and cooled brewed coffee, mixing until fully blended.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt; whisk to mix.
- Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
- Fold in chocolate chips if desired.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden and centers are just set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
