Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg, vanilla extract, and cooled brewed coffee, mixing until fully blended.
  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt; whisk to mix.
  5. Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  6. Fold in chocolate chips if desired.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden and centers are just set.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
