Description

A delightful dish that blends the wonderful flavors of coconut with fragrant jasmine rice, perfect as a side for any meal.


Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup water
  • 1 tsp salt
  • 1 tbsp sugar (optional)
  • Cilantro or green onions for garnish (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the coconut milk, water, salt, and sugar (if using) in a saucepan and bring to a boil.
  3. Stir in the rinsed rice, reduce the heat to low, and cover with a lid.
  4. Cook for about 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
  5. Remove from heat and let it sit, covered, for an additional 5 minutes.
  6. Fluff the rice with a fork and garnish with cilantro or green onions before serving.

Notes

For a dessert variation, add chopped fruits and a dash of cinnamon.
