Description
A quick and satisfying one-skillet dish packed with protein, fiber, and vitamins.
Ingredients
Scale
- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (14 oz) diced tomatoes, undrained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups shredded cheese (cheddar or your choice)
- Fresh cilantro for garnish (optional)
- Sour cream for serving (optional)
Instructions
- Cook the meat: In a large skillet over medium heat, add the ground beef or turkey. Break it apart with a spatula and cook until it turns brown, about 5-7 minutes. Drain any excess fat.
- Add vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté until the vegetables soften, about 3-4 minutes.
- Mix in other ingredients: Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Combine everything well.
- Simmer: Reduce the heat to low, cover, and let it simmer for about 10 minutes. This allows the flavors to blend.
- Add cheese: Uncover and sprinkle the shredded cheese on top. Cover again until the cheese melts, about 3-5 minutes.
- Serve: Garnish with fresh cilantro if desired. Serve hot with sour cream on the side.
