  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheese (cheddar or your choice)
  • Fresh cilantro for garnish (optional)
  • Sour cream for serving (optional)

Instructions

  1. Cook the meat: In a large skillet over medium heat, add the ground beef or turkey. Break it apart with a spatula and cook until it turns brown, about 5-7 minutes. Drain any excess fat.
  2. Add vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté until the vegetables soften, about 3-4 minutes.
  3. Mix in other ingredients: Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Combine everything well.
  4. Simmer: Reduce the heat to low, cover, and let it simmer for about 10 minutes. This allows the flavors to blend.
  5. Add cheese: Uncover and sprinkle the shredded cheese on top. Cover again until the cheese melts, about 3-5 minutes.
  6. Serve: Garnish with fresh cilantro if desired. Serve hot with sour cream on the side.
