Description

A traditional Southern treat featuring sweet candied sugar and fluffy egg whites, complemented by crunchy pecans.


Ingredients

Scale
  • 2 cups sugar
  • 1/2 cup water
  • 2 egg whites
  • 1 cup pecans
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the sugar and water. Cook over medium heat, stirring until the sugar dissolves completely.
  2. Once dissolved, increase heat and bring the mixture to a boil without stirring. Monitor temperature with a candy thermometer until it reaches soft-ball stage (238°F/114°C).
  3. While waiting, beat the egg whites in a mixing bowl until they form stiff peaks.
  4. Slowly pour the syrup into the beaten egg whites while continuously mixing to avoid cooking the egg whites too quickly.
  5. Add salt, vanilla extract, and chopped pecans, mixing until well combined.
  6. Drop spoonfuls of the mixture onto wax paper and let cool until set.

Notes

Store in an airtight container at room temperature. Best consumed within two weeks.
