A traditional Southern treat featuring sweet candied sugar and fluffy egg whites, complemented by crunchy pecans.
Ingredients

- 2 cups sugar
- 1/2 cup water
- 2 egg whites
- 1 cup pecans
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the sugar and water. Cook over medium heat, stirring until the sugar dissolves completely.
- Once dissolved, increase heat and bring the mixture to a boil without stirring. Monitor temperature with a candy thermometer until it reaches soft-ball stage (238°F/114°C).
- While waiting, beat the egg whites in a mixing bowl until they form stiff peaks.
- Slowly pour the syrup into the beaten egg whites while continuously mixing to avoid cooking the egg whites too quickly.
- Add salt, vanilla extract, and chopped pecans, mixing until well combined.
- Drop spoonfuls of the mixture onto wax paper and let cool until set.
Notes
Store in an airtight container at room temperature. Best consumed within two weeks.
