Description

Homemade Caesar dressing is creamy, tangy, and packed with flavor. It’s perfect for salads, grilled meats, and more.


Ingredients

  • 1 large egg yolk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons anchovy paste or 2 anchovy fillets, minced
  • 1 garlic clove, finely grated or minced
  • 1/3 cup neutral oil (like canola or grapeseed oil)
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup finely grated Parmesan cheese
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. In a medium mixing bowl, whisk together the egg yolk, lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste, and garlic until smooth.
  2. While whisking constantly, drizzle in the neutral oil very slowly to create an emulsion.
  3. Once it thickens up, you can add the remaining oil more steadily.
  4. Finish by whisking in the extra virgin olive oil until fully combined.
  5. Stir in the grated Parmesan cheese. Taste and season with salt and pepper to your liking.
  6. Cover and refrigerate for at least 30 minutes before serving.

Store in an airtight container in the fridge for up to a week or freeze for up to 3 months.
