Ingredients

- 1 large egg yolk
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 teaspoons anchovy paste or 2 anchovy fillets, minced
- 1 garlic clove, finely grated or minced
- 1/3 cup neutral oil (like canola or grapeseed oil)
- 2 tablespoons extra virgin olive oil
- 1/3 cup finely grated Parmesan cheese
- Salt and freshly cracked black pepper, to taste
Instructions
- In a medium mixing bowl, whisk together the egg yolk, lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste, and garlic until smooth.
- While whisking constantly, drizzle in the neutral oil very slowly to create an emulsion.
- Once it thickens up, you can add the remaining oil more steadily.
- Finish by whisking in the extra virgin olive oil until fully combined.
- Stir in the grated Parmesan cheese. Taste and season with salt and pepper to your liking.
- Cover and refrigerate for at least 30 minutes before serving.

Store in an airtight container in the fridge for up to a week or freeze for up to 3 months.
