Description

Soft, spiced gingerbread cookies decorated with royal icing, perfect for the holidays.


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 2 cups powdered sugar (for icing)
  • 2 tablespoons water (for icing)
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, beat together butter and brown sugar until light and fluffy.
  4. Mix in the egg and molasses until combined.
  5. Gradually add the dry ingredients to the wet mixture until well blended.
  6. Roll out the dough on a floured surface to about 1/4 inch thick and cut into shapes with cookie cutters.
  7. Place cookies on baking sheets and bake for 8-10 minutes, or until edges are firm.
  8. Let cool completely.
  9. For the royal icing, mix powdered sugar and water until smooth, adding food coloring if desired.
  10. Decorate the completely cooled cookies with royal icing and let set before serving.

Notes

Chill the dough if it’s too soft and ensure cookies are cooled completely before icing.
