Description

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped nuts (such as pecans or almonds)
  • Optional: sea salt for sprinkling

Instructions

  1. Prepare your baking sheet: Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a saucepan: Combine the butter, granulated sugar, brown sugar, water, and salt over medium heat, stirring constantly until it comes to a boil.
  3. Cook until golden: Stop stirring and let it cook until it reaches a deep amber color, about 300°F to 310°F on a candy thermometer.
  4. Add vanilla: Remove from heat and quickly stir in vanilla extract.
  5. Pour and spread: Immediately pour the mixture onto the prepared baking sheet and spread it evenly with a spatula.
  6. Add chocolate chips: Sprinkle chocolate chips over the hot toffee, let them melt for a minute, then spread them evenly.
  7. Add nuts: While the chocolate is still melted, sprinkle chopped nuts on top and press down lightly.
  8. Cool: Let the toffee cool at room temperature for 1-2 hours until hard.
  9. Break into pieces: Once cooled, break the toffee into pieces and optionally sprinkle with sea salt.

Notes

Store the toffee in an airtight container layered between wax paper. It keeps at room temperature for 2-3 weeks.
