A comforting and creamy classic with tender beef, mushrooms, and egg noodles.
Ingredients

- 1 lb beef sirloin, cut into strips
- 8 oz sliced mushrooms
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup beef broth
- 1 cup sour cream
- 2 tbsp flour
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 12 oz egg noodles
- Fresh parsley for garnish
Instructions
- Cook egg noodles according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onions and garlic, and sauté until onions are translucent.
- Add beef sirloin and cook until browned.
- Stir in the mushrooms and cook for another 3-4 minutes.
- Sprinkle flour over the mixture, stir well to combine.
- Slowly pour in beef broth, stirring continually until thickened.
- Reduce heat, add sour cream and Dijon mustard, and stir until well combined.
- Season with salt and pepper to taste.
- Serve over cooked egg noodles and garnish with fresh parsley.
Notes
For a lighter version, substitute sour cream with Greek yogurt.
