Description

Flaky, buttery, and authentic — this Claire Saffitz croissant recipe creates bakery-style results right at home.


Ingredients

Scale

4 cups flour

1/2 cup sugar

1 tbsp yeast

1.5 tsp salt

1.5 cups cold milk

1 cup cold butter

1 egg for wash


Instructions

1. Combine flour, sugar, yeast, salt, and milk.

2. Knead gently and chill 1 hour.

3. Flatten butter block and wrap inside dough.

4. Roll and fold 3 times, chilling between turns.

5. Cut triangles and shape croissants.

6. Proof 1–2 hours until puffy.

7. Brush with egg wash.

8. Bake at 375°F for 25 minutes.

Notes

Keep dough cold for best lamination.

Rest between each fold.

Freeze unbaked croissants for future baking.
