Instructions
- Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- Mix the buttermilk, egg, and melted butter together until smooth in another bowl.
- Combine the wet and dry ingredients, stirring gently until just mixed; it’s okay if there are a few lumps.
- Mix the brown sugar and cinnamon in a small bowl to create the filling.
- Heat a skillet over medium heat and lightly grease it with butter or cooking spray.
- Pour about 1/4 cup of batter onto the skillet to form a pancake.
- Sprinkle a bit of the cinnamon-sugar mixture on top of the pancake before flipping.
- Flip the pancake once bubbles appear on the surface and the edges look set; cook until golden brown on both sides, about 2-3 minutes per side.
- Serve warm with cream cheese frosting drizzled on top.
