Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Mix the buttermilk, egg, and melted butter together until smooth in another bowl.
  3. Combine the wet and dry ingredients, stirring gently until just mixed; it’s okay if there are a few lumps.
  4. Mix the brown sugar and cinnamon in a small bowl to create the filling.
  5. Heat a skillet over medium heat and lightly grease it with butter or cooking spray.
  6. Pour about 1/4 cup of batter onto the skillet to form a pancake.
  7. Sprinkle a bit of the cinnamon-sugar mixture on top of the pancake before flipping.
  8. Flip the pancake once bubbles appear on the surface and the edges look set; cook until golden brown on both sides, about 2-3 minutes per side.
  9. Serve warm with cream cheese frosting drizzled on top.
