Description

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for the filling)
  • 2 tsp ground cinnamon (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with the granulated and brown sugars until fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by mixing brown sugar and cinnamon in a bowl.
  7. Take half of the dough and spread it on a sheet of parchment paper. Sprinkle the filling over the dough.
  8. Roll the dough tightly using the parchment paper.
  9. Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until golden brown.
