- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- ½ cup brown sugar, packed (for the filling)
- 2 tsp ground cinnamon (for the filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In another bowl, cream the softened butter with the granulated and brown sugars until fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Prepare the filling by mixing brown sugar and cinnamon in a bowl.
- Take half of the dough and spread it on a sheet of parchment paper. Sprinkle the filling over the dough.
- Roll the dough tightly using the parchment paper.
- Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.

Store cookies in an airtight container at room temperature for about three days or freeze for up to three months.
