- 1 cup Honey Bunches of Oats Morning Energy Cinnamon Crunch cereal
- â…“ cup whole wheat flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 3 tablespoons sugar
- ½ teaspoon cinnamon
- 3 large eggs
- ½ cup nonfat milk
- 2 tablespoons melted butter, cooled
- 1 teaspoon vanilla extract (optional)
- 6 ounces Greek yogurt
- 3 cups fresh berries (blackberries, raspberries, blueberries, strawberries, or a mix)
- Honey for drizzling
- Nutmeg or cinnamon for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix together the cereal, whole wheat flour, baking powder, salt, sugar, and cinnamon until well combined.
- In a separate bowl, whisk together the eggs, nonfat milk, melted butter, and vanilla extract (if using) until smooth.
- Gently combine the wet and dry ingredients, stirring just until no flour clumps remain.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 20–25 minutes, until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before cutting into individual pieces.
- Serve topped with Greek yogurt, fresh berries, a drizzle of honey, and a sprinkle of nutmeg or cinnamon.
Notes
Avoid overmixing the batter and ensure eggs are at room temperature for a fluffier texture.
