- 1 cup quinoa
- 2 cups almond milk (or other non-dairy milk)
- 1 teaspoon cinnamon
- 2 tablespoons maple syrup (or to taste)
- 1 apple, diced
- 1/4 teaspoon salt

Instructions
- Rinse the quinoa under cold water.
- Combine quinoa, almond milk, cinnamon, and salt in a saucepan. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and liquid is absorbed.
- Stir in the diced apples and maple syrup, cooking for an additional 5 minutes until the apples are tender.
- Serve warm, topped with desired nuts, seeds, or dried fruits.
