- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 lime, juiced
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup cabbage slaw
- 1 avocado, sliced
- Sour cream or yogurt (optional)
Instructions
- In a bowl, combine shrimp with olive oil, lime juice, chopped cilantro, chili powder, salt, and pepper. Let it marinate for 15-20 minutes.
- Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
- While the shrimp is cooking, warm the corn tortillas.
- Assemble the tacos by placing cooked shrimp on a warm tortilla, adding cabbage slaw and avocado slices on top.
- Optional: drizzle sour cream or yogurt on top, then serve immediately.
Notes
To store leftovers, keep shrimp and toppings in separate airtight containers. Avoid reheating avocado; it’s best served fresh.
