- 2 chicken breasts
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 1 cup cooked rice or quinoa
- 1 cup black beans, rinsed
- 1 cup diced tomatoes
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- In a bowl, mix the lime juice, chopped cilantro, salt, and pepper to create the marinade.
- Coat the chicken breasts well with the marinade and marinate for at least 30 minutes.
- Grill or sauté the marinated chicken for about 6-7 minutes per side, until cooked through with an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes, then slice it into strips or bite-sized pieces.
- In a bowl, layer cooked rice or quinoa, black beans, diced tomatoes, and avocado slices. Top with the sliced chicken.
- Drizzle any remaining lime-cilantro sauce over the top and serve fresh.
Notes
