Description

Ingredients

  • 2 chicken breasts
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup cooked rice or quinoa
  • 1 cup black beans, rinsed
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the lime juice, chopped cilantro, salt, and pepper to create the marinade.
  2. Coat the chicken breasts well with the marinade and marinate for at least 30 minutes.
  3. Grill or sauté the marinated chicken for about 6-7 minutes per side, until cooked through with an internal temperature of 165°F (75°C).
  4. Let the chicken rest for a few minutes, then slice it into strips or bite-sized pieces.
  5. In a bowl, layer cooked rice or quinoa, black beans, diced tomatoes, and avocado slices. Top with the sliced chicken.
  6. Drizzle any remaining lime-cilantro sauce over the top and serve fresh.
