- 1 sleeve (about 40) Saltine Crackers
- 1 cup Unsalted Butter
- 1 cup Brown Sugar
- 1 teaspoon Vanilla Extract
- 2 teaspoons Ground Cinnamon
- 1 cup Semi-Sweet Chocolate Chips
- ½ cup Granulated Sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a large baking sheet with aluminum foil and parchment paper.
- Arrange the saltine crackers in a single layer over the parchment paper.
- In a medium saucepan, combine the butter and brown sugar over medium heat, stirring until melted and the sugar dissolves completely.
- Let the mixture boil for 3 to 5 minutes until it thickens and turns a caramel color.
- Remove from heat and stir in the vanilla extract and 1 teaspoon of ground cinnamon.
- Pour the toffee mixture evenly over the arranged saltine crackers and use a spatula to spread it gently.
- Bake for 5 to 7 minutes until bubbly and slightly darker around the edges.
- Remove from oven and sprinkle the chocolate chips over the hot toffee, letting it sit for 5 minutes until the chocolate softens.
- Spread the melted chocolate into an even layer.
- Mix the granulated sugar and remaining ground cinnamon in a small bowl and sprinkle over the chocolate layer.
- Let the toffee cool completely at room temperature or refrigerate for 30 to 60 minutes.
- Once firm, lift the parchment paper and break the toffee into irregular pieces.
