- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the butter mixture until combined.
- Mix the softened cream cheese and powdered sugar until smooth in a separate bowl.
- Take a small amount of cookie dough, flatten it, and place a spoonful of the cream cheese mixture in the center. Wrap the dough around the filling to form a ball.
- Roll each ball in a mixture of granulated sugar and ground cinnamon.
- Place on a baking sheet lined with parchment paper and bake for 12-15 minutes or until lightly golden.
- Allow to cool before enjoying your Churro Cheesecake Cookies.
Notes
For best results, chill the dough if it’s too sticky.
