- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, beat together softened butter, cream cheese, granulated sugar, brown sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well.
- In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually add to wet ingredients, mixing until just combined.
- In a small bowl, beat together softened cream cheese, powdered sugar, and vanilla until smooth for cheesecake filling.
- Take about 1 tablespoon of cookie dough, flatten, add 1 teaspoon of cheesecake filling, and wrap dough around it to form a ball.
- Roll each ball in cinnamon sugar mixture and place on baking sheets, 2 inches apart.
- Bake for 10–12 minutes or until set and lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
