Description

Delicious cookies with a creamy cheesecake filling and a cinnamon-sugar coating, reminiscent of churros.


Ingredients

  • 1/2 cup cream cheese, softened

  • 1/2 cup packed brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup cinnamon sugar (for rolling)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat together softened butter, cream cheese, granulated sugar, brown sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well.
  3. In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually add to wet ingredients, mixing until just combined.
  4. In a small bowl, beat together softened cream cheese, powdered sugar, and vanilla until smooth for cheesecake filling.
  5. Take about 1 tablespoon of cookie dough, flatten, add 1 teaspoon of cheesecake filling, and wrap dough around it to form a ball.
  6. Roll each ball in cinnamon sugar mixture and place on baking sheets, 2 inches apart.
  7. Bake for 10–12 minutes or until set and lightly golden.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
