Description

Ingredients

  • ½ cup buttermilk
  • 1 cup toffee bits (such as Heath Bar bits)
  • ½ cup chopped walnuts or pecans (optional)
  • 1 cup chocolate frosting (store-bought or homemade)
  • ¼ cup additional toffee bits for topping
  • Whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients in three parts, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
  6. Fold in the toffee bits and chopped nuts (if using). Be careful not to overmix.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Once the cake is completely cool, spread the chocolate frosting evenly over the top.
  11. Sprinkle the additional toffee bits on top of the frosting for added crunch and festive appeal.
  12. Slice the cake and serve with a dollop of whipped cream, if desired.
