- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk
- 1 cup toffee bits (such as Heath Bar bits)
- ½ cup chopped walnuts or pecans (optional)
- 1 cup chocolate frosting (store-bought or homemade)
- ¼ cup additional toffee bits for topping
- Whipped cream for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients in three parts, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
- Fold in the toffee bits and chopped nuts (if using). Be careful not to overmix.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once the cake is completely cool, spread the chocolate frosting evenly over the top.
- Sprinkle the additional toffee bits on top of the frosting for added crunch and festive appeal.
- Slice the cake and serve with a dollop of whipped cream, if desired.
