Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup mixed dried fruit (such as raisins, currants, and chopped dried apricots)
  • 1 cup mixed nuts, chopped (walnuts and pecans work well)
  • 1/2 cup candied ginger, finely chopped
  • 1/2 cup candied orange peel, finely chopped
  • 1/2 cup dark chocolate chips (optional)
  • 1/4 cup orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves.
  5. Gradually add the dry mixture to the butter mixture, mixing until just combined.
  6. Fold in the mixed dried fruit, chopped nuts, candied ginger, candied orange peel, dark chocolate chips, and orange juice.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheets for about 5 minutes, then transfer them to wire racks to cool completely.
