- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup mixed dried fruit (such as raisins, currants, and chopped dried apricots)
- 1 cup mixed nuts, chopped (walnuts and pecans work well)
- 1/2 cup candied ginger, finely chopped
- 1/2 cup candied orange peel, finely chopped
- 1/2 cup dark chocolate chips (optional)
- 1/4 cup orange juice
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves.
- Gradually add the dry mixture to the butter mixture, mixing until just combined.
- Fold in the mixed dried fruit, chopped nuts, candied ginger, candied orange peel, dark chocolate chips, and orange juice.
- Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheets for about 5 minutes, then transfer them to wire racks to cool completely.
