Delicious Christmas Cheesecake Bars with a festive blend of creamy cheesecake and cherry pie filling, topped with sliced almonds.

- 1 (8.5 oz) Sugar Cookie Mix
- 4 tbsp Butter, Cold
- 1 (8 oz) Cream Cheese, Softened
- 1/4 cup Sugar
- 1 tbsp Flour
- 1/2 tsp Vanilla
- 1 Egg
- 3/4 can Cherry Pie Filling
- 1/3 cup Almonds, Sliced
Instructions
- Preheat your oven to 350°F (175°C).
- Spray an 8 x 8 pan with non-stick spray and set it aside.
- In a small bowl, combine the sugar cookie mix and the cold, cubed butter. Mix until crumbly.
- Set aside 3/4 cup of the crumbly mixture.
- Press the remaining mixture into the bottom of the prepared pan. Bake for 10 minutes.
- Place the pan in the refrigerator to cool.
- In a mixing bowl, beat together the softened cream cheese, sugar, flour, vanilla, and egg until smooth and creamy.
- Once the crust is cooled, spread the cheesecake mixture evenly over it.
- Spoon the cherry pie filling over the cheesecake mixture and spread evenly.
- Stir the sliced almonds into the reserved crumbly mixture and sprinkle on top.
- Bake the dessert for 40 minutes.
- Let it cool for 30 minutes, then refrigerate until cold and firm.
Notes
Ensure cream cheese is softened to room temperature for a smooth batter. Store bars in the refrigerator for up to a week.
