Description

Delicious Christmas Cheesecake Bars with a festive blend of creamy cheesecake and cherry pie filling, topped with sliced almonds.


Ingredients

Scale
  • 1 (8.5 oz) Sugar Cookie Mix
  • 4 tbsp Butter, Cold
  • 1 (8 oz) Cream Cheese, Softened
  • 1/4 cup Sugar
  • 1 tbsp Flour
  • 1/2 tsp Vanilla
  • 1 Egg
  • 3/4 can Cherry Pie Filling
  • 1/3 cup Almonds, Sliced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray an 8 x 8 pan with non-stick spray and set it aside.
  3. In a small bowl, combine the sugar cookie mix and the cold, cubed butter. Mix until crumbly.
  4. Set aside 3/4 cup of the crumbly mixture.
  5. Press the remaining mixture into the bottom of the prepared pan. Bake for 10 minutes.
  6. Place the pan in the refrigerator to cool.
  7. In a mixing bowl, beat together the softened cream cheese, sugar, flour, vanilla, and egg until smooth and creamy.
  8. Once the crust is cooled, spread the cheesecake mixture evenly over it.
  9. Spoon the cherry pie filling over the cheesecake mixture and spread evenly.
  10. Stir the sliced almonds into the reserved crumbly mixture and sprinkle on top.
  11. Bake the dessert for 40 minutes.
  12. Let it cool for 30 minutes, then refrigerate until cold and firm.

Notes

Ensure cream cheese is softened to room temperature for a smooth batter. Store bars in the refrigerator for up to a week.
