Description

A delightful cake combining rich chocolate flavors with creamy mascarpone, perfect for celebrations or as a sweet treat.


Ingredients

  • 240 grams cake flour, spooned and leveled
  • 80 grams black cocoa powder
  • 1/2 teaspoon fine sea salt
  • 1 tablespoon baking powder
  • 350 grams granulated sugar
  • 160 mL canola oil
  • 2 large eggs, room temperature
  • 150 grams sour cream
  • 240 mL hot coffee (Americano)
  • 680 grams mascarpone cheese, cold
  • 300 grams powdered sugar
  • Tiny pinch fine sea salt
  • 480 mL heavy whipping cream, cold
  • 2 teaspoons vanilla bean paste
  • 180 mL (6 shots) espresso, room temperature
  • 50 grams granulated sugar
  • 12 lady fingers, trimmed to cake size
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 8-inch cake pans by greasing and lining them with parchment paper.
  2. In a large bowl, whisk together cake flour, black cocoa powder, baking powder, fine sea salt, and granulated sugar.
  3. In a separate bowl, mix canola oil, eggs, sour cream, and hot coffee until smooth.
  4. Gradually combine the wet mixture into the dry ingredients, stirring until smooth.
  5. Divide batter evenly between the cake pans and bake for 25-30 minutes until a toothpick comes out clean. Allow cakes to cool completely.
  6. Beat mascarpone cheese, powdered sugar, pinch of salt, and vanilla bean paste in a bowl until combined. Gradually add cold heavy whipping cream and whip until light and fluffy.
  7. In a shallow dish, mix room temperature espresso and granulated sugar until dissolved.
  8. Quickly dip each lady finger into the espresso mixture and set aside.
  9. Assemble the cake by placing one layer of chocolate cake on a serving plate, adding mascarpone cream, layered lady fingers, and repeating until finished with a layer of mascarpone cream on top.
  10. Dust the top with cocoa powder and refrigerate for at least 2 hours before serving.

Notes

Serve with fresh berries, whipped cream, or ice cream for enhanced flavors.
