Instructions

  1. Prepare your workspace: Line a large baking sheet with parchment paper.
  2. Mix the ingredients: Combine diced strawberries, Greek yogurt, and vanilla extract in a large bowl until well coated.
  3. Shape the clusters: Transfer the mixture onto the prepared baking sheet in clusters of about 2 tablespoons each.
  4. Freeze the clusters: Place the baking sheet in the freezer for 30-45 minutes.
  5. Melt the chocolate: In a small bowl, combine chocolate chips and coconut oil, then melt in the microwave in 30-second increments.
  6. Coat the clusters: Dip each frozen cluster into the melted chocolate and place back on the baking sheet.
