Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Combine the spinach, eggs, milk, and vegetable oil in a blender until smooth.
- Mix the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
- Pour the spinach mixture into the bowl with the dry ingredients and stir until just combined.
- Fill the muffin cups about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
