Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine the spinach, eggs, milk, and vegetable oil in a blender until smooth.
  3. Mix the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Pour the spinach mixture into the bowl with the dry ingredients and stir until just combined.
  5. Fill the muffin cups about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
