Description

Delicious and guilt-free chocolate truffles made with creamy ricotta and dark chocolate, rolled in chopped almonds.


Ingredients

  • 1/2 cup whole-milk ricotta cheese
  • 1/2 cup dark chocolate, melted
  • 1/4 cup chopped almonds

Instructions

  1. In a mixing bowl, blend the ricotta cheese with the melted dark chocolate until smooth and fully incorporated.
  2. Place the mixture in the refrigerator and chill for 30 minutes until firm enough to shape.
  3. Using a spoon, scoop portions of the firm mixture and roll them into balls approximately 2.5 cm (1 inch) in diameter.
  4. Roll each truffle in chopped almonds, pressing gently to coat evenly.

Notes

Make sure the chocolate isn’t hot when mixing with ricotta, chill thoroughly to avoid messy rolling.
