- 1–2 teaspoons milk
- Green food coloring (optional)
- For the Chocolate Dough:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil or butter (for drizzling)
Instructions
- Prepare the Mint Filling: Beat the softened butter, powdered sugar, peppermint extract, and milk in a bowl until smooth. Add green food coloring if desired, then scoop into small portions and freeze until firm.
- Make the Chocolate Dough: Cream the softened butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract, mixing until fully combined.
- Mix the Dough: Whisk the flour, cocoa powder, baking soda, and salt in a separate bowl. Gradually add to the wet mixture, stirring until you have a thick dough.
- Stuff and Shape: Take a small piece of chocolate dough, flatten it, place a frozen mint filling scoop in the center, wrap the dough around it and roll into a ball. Place on a lined baking sheet.
- Bake and Finish: Preheat oven to 350°F (175°C) and bake for 10–12 minutes until edges are set. Cool on a wire rack and drizzle melted chocolate over cooled cookies.
