Ingredients

- 1 cup (200 g) semi-sweet chocolate chips
- 1/2 cup (120 ml) heavy whipping cream
- 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
- 1/2 cup (40 g) Dutch-process cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup (168 g) unsalted butter, softened
- 3/4 cup (165 g) light brown sugar, packed
- 1/4 cup (50 g) granulated sugar
- 2 egg yolks, room temperature
- 1 1/2 teaspoons vanilla extract
- Powdered sugar, for dusting
Instructions
- Make the Chocolate Ganache: Place chocolate chips in a heat-safe bowl. Heat the cream until steaming, then pour it over the chocolate chips. Let the mixture sit for 1 minute, then stir until smooth. Chill for 10–15 minutes until it is scoopable, then portion it and freeze until firm.
- Prepare the Cookie Dough: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Cream the softened butter and both types of sugar together until fluffy. Add the egg yolks and vanilla extract, then mix in the dry ingredients just until everything is combined.
- Assemble the Cookies: Scoop the dough into portions and flatten them slightly. Place a frozen ganache ball in the center of each portion. Wrap the cookie dough around the ganache, sealing it completely, and roll it into a smooth ball.
- Bake and Finish: Bake 6 cookies per sheet for 10–11 minutes until the edges are set but the center is still soft. Cool the cookies for 10 minutes on the baking sheet, then transfer them to a cooling rack. Dust the warm cookies with powdered sugar before serving for a nice finish.
Notes
Chill the ganache enough to scoop easily. Don’t overmix the dough to keep cookies tender. Watch baking time closely.
