Description

Delicious chocolate cookies filled with rich Nutella ganache and crunchy hazelnuts.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup toasted hazelnuts, chopped
  • 1/2 cup Nutella

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Form small balls of dough and roll them in the chopped hazelnuts.
  6. Place the dough balls on the prepared baking sheet and slightly flatten them.
  7. Bake for 10-12 minutes until set. Allow to cool.
  8. For the filling, melt the Nutella in a bowl. Once the cookies are cool, spread or pipe a layer of Nutella between two cookies to make a sandwich.

Notes

These cookies stay fresh for up to a week at room temperature. Chill the dough if it’s too soft to work with.
