Description
Delicious chocolate cookies filled with rich Nutella ganache and crunchy hazelnuts.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup toasted hazelnuts, chopped
- 1/2 cup Nutella
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a separate bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla, mixing well.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Form small balls of dough and roll them in the chopped hazelnuts.
- Place the dough balls on the prepared baking sheet and slightly flatten them.
- Bake for 10-12 minutes until set. Allow to cool.
- For the filling, melt the Nutella in a bowl. Once the cookies are cool, spread or pipe a layer of Nutella between two cookies to make a sandwich.
Notes
These cookies stay fresh for up to a week at room temperature. Chill the dough if it’s too soft to work with.
